Identifikasi Senyawa Metabolit Sekunder Dan Aktivitas Antioksidan Ekstrak Cangkang Bulu Babi (Diadema Setosum) Dengan Konsentrasi Pelarut Etanol Berbeda
ABSTRACT
Sea urchin shell (Diadema setosum) is a waste that has not been well utilized but has the potential to contain high antioxidants. This study aims to determine the yield value and chemical composition (proximate) of sea urchin shell flour, determine the secondary metabolite compounds (quantitative and qualitative) and antioxidant activity in sea urchin shell extract with different concentrations of ethanol solvent. The research method was an experiment on the antioxidant activity of sea urchin shell flour extracted using different concentrations of ethanol solvent, namely 60% (K1), 70% (K2), and 95% (K3). Data were analyzed statistically (ANOVA) and descriptively. The parameters analyzed were yield, proximate analysis, secondary metabolite compounds (qualitative and quantitative) and antioxidant activity. The results showed that the yield value of sea urchin shell flour was 87.26%. Proximate analysis such as moisture, ash, protein, fat, and carbohydrate content (by difference) were 0.28%, 85.13%, 7.11%, 2.04%, and 5.44%, respectively. Secondary metabolite compounds identified were phenolic compounds (K1), saponin compounds (K2 and K3), and alkaloid compounds (K3). Quantitative test results of phenolic and alkaloid secondary metabolite compounds amounted to 1.37% and 0.05%, respectively. Extracts K1, K2, and K3 of sea urchin shell showed antioxidant activity with IC50 values of 147.54 ppm, 328.04 ppm, and 627.77 ppm, respectively. Extract K1 showed the highest antioxidant activity.
