Uji Organoleptik Microgreens Dari Biji Pepaya (Carica Papaya L. Var. Callina)
Callina papaya seeds are worth developing as microgreens. Papaya microgreens need to be introduced to the public as a new food. This study aims to determine the organoleptic acceptability of papaya microgreens based on age group and presentation method. Organoleptic tests were conducted on three age groups, namely adolescents (17-25 years), adults (26-45 years) and elderly (46-65 years). Each age group consisted of 10 panelists. Each panelist evaluated three ways of serving papaya microgreens. namely fresh papaya microgreens, papaya microgreens with urap seasoning and papaya microgreens with peanut sauce. The assessment was carried out based on five categories, namely color, aroma, texture, taste and overall level of liking. The rating scale given was: 1= Very dislike; 2= Dislike; 3= Neutral; 4= Like and 5= Very like. Organoleptic test results show that age and presentation method affect consumer acceptance. The highest order of consumer acceptance of papaya microgreens based on age groups in all assessment categories (color, aroma, texture, taste and overall level of liking) is the elderly, adolescents and adults. The way of serving papaya microgreens with urap seasoning and peanut sauce is accepted by all age groups in all assessment categories.
