Karakteristik Mutu Water Kefir Belimbing Manis (Averrhoa Carambola L.) Dengan Penambahan Buah Naga Merah (Hylocereus Polyrhizus)
Star fruit water kefir has an unattractive color. In addition, red dragon fruit juice is an ingredient that can improve the quality of star fruit water kefir. This study aimed to obtain the best formulation of dragon fruit juice on the chemical, microbiological and sensory characteristics of star fruit water kefir. The research was conducted experimentally using a completely randomized design (CRD) with five treatments and four replications to obtain twenty experimental units. The treatment in this study was the addition of red dragon fruit juice to sweet star fruit water kefir, including PN0 (0%), PN1 (5%), PN2 (10%), PN3 (15%), and PN4 (20%). The data were analyzed statistically using analysis of variance (ANOVA) with duncan's multiple range test (DMRT) at the 5% level. The results showed that adding red dragon fruit juice with different concentrations significantly affected the pH of the star fruit water kefir, color test, and organoleptic assessment (color and taste). The best treatment formulation is treatment addition of red dragon fruit juice to star fruit water kefir treatment was obtained is PN2 (addition of 10% red dragon fruit juice) with the criteria of a, 0.59% titrated acid total, 3.86 pH value, 9.79 log CFU/ml total LAB, 0.20% alcohol content, and L* 26.47, a* 4.45, b* 2.67. The sensory characteristics of the PN2 treatment were pink color, the smell is acid and alcohol, a sweet, sour taste, and a sensation of soda. The overall rating liked by the panelists.
