Analisis Kadar Vitamin C Dan Β-Karoten Pada Biji Mangga Arum Manis (Mangifera Indica L. Var. Arum Manis)
Arum manis mango seeds have very strong antioxidant activity with an IC50 value of 2.84 μg/mL. The strong antioxidant activity is influenced by the antioxidant compounds contained in it. This study aims to analyze the levels of vitamin C and β-carotene in arum manis mango seeds obtained from ripe fruit on trees, modern markets and traditional markets in Pekanbaru. This research method uses a Completely Randomized Design (CRD) conducted with 3 replications. Data analysis used analysis of variance at the 5% level, then LSD (Least Significant Difference) further test at the 5% level. The results showed that arum manis mango seeds contain high levels of vitamin C and β-carotene. Vitamin C and β-carotene level of arum manis mango seeds obtained from ripe fruit on trees were higher (1.31% and 0.08%) compared to those obtained from modern markets (1.04% and
0.07%) and traditional markets (1 .02% and 0.06%).
