Karakteristik Fisiko-Kimia Konsentrat Protein Ikan Seluang (rasbora argyrotaenia) Diekstraksi Dengan Pelarut Berbeda
Seluang fish (Rasbora argyrotaenia) is an economically valuable freshwater fish that can be found in river, lake, and swamp waters. The protein content in fresh seluang fish per 100 g is 21.49%. The purpose of this study was to obtain fish protein concentrate (FPC) from seluang fish and determine the physico-chemical characteristics of seluang FPC extracted with different solvents. The research method is an experiment with 2 levels of treatment, namely ethanol and n-hexane solvents with an independent t test. The results showed that the physico-chemical characteristics of FPC seluang extracted with different solvents had significant differences in the yield value of FPC seluang flour, organoleptic value (odor), chemical content (water, ash, fat, and protein), and physical properties (water absorption, oil absorption, and cube density). Extraction with ethanol solvent produced a yield of 19.31%, organoleptic characteristics smelled of fish, with water content of 8.86%, ash 17.11%, protein 61.53%, fat 12.50% as well as water absorption, oil absorption, and liquid density respectively 1.97 g/mL, 1.06 g/mL, and 0.48 g/mL. Extraction with n-hexan solvent produced a yield of 19.42%, organoleptic characteristics do not smell of fish, with a moisture content of 9.81%, ash 19.6%, protein 63.89%, and fat 6.70% while water absorption, oil absorption, and cube density are 2.09 g/mL, 0.71 g/mL, and 0.52 g/mL, respectively. The amino acid content produced by FPC seluang both treatments has 15 types of amino acid composition with the highest value in essential amino acids, namely lysine 5.14% (ethanol); 5.26% (n-hexane). The results of FPC seluang extracted using n-hexan included FPC type B while those extracted using ethanol solvent produced FPC type C based on SNI 01- 2715: 1992.
