Potensi Agar Rumput Laut Merah (Gelidium Spinosum) Sebagai Inhibitor Alfa-Glukosidase
Gelidium spinosum is one type of red seaweed as raw material for agar because it has gel-forming properties and low sulfate content. Agar is one of the complex polysaccharide hydrocolloids, consisting of 3-linked β-D- galactopynosyl
(G) and 4-linked 3,6 anhydro-α-L-galactopynosyl units. Polysaccharides play a role as functional food and neutraceutical. This study aims to determine the physico- chemical characteristics, fibre and alpha-glucosidase inhibitor of G. spinosum agar. The method use in this research is an experimental by extracting G. spinosum seaweed using 6% NaOH solution in a hot atmosphere (85-90oC). The analysis parameters consisted of physicochemical properties test (water content, ash, fat, protein, sulfate, yield, and viscosity), fibre test (crude fibre and dietary fibre) and alpha-glucosidase inhibitor activity test. After conducting the research, it was found that the chemical characteristics of G. spinosum agar had moisture, ash, fat, protein and sulfate content of 7.47%; 4.65%; 2.83%; 0.48%, respectively. Water content, ash, have met the standards of SNI 28-2: 2015. Crude fibre content of G. spinosum agar was 0.48%,. Total dietary fibre content, insoluble fibre, soluble fibre were 11.25%; 10.78%; 0.47% respectively. The physical characteristics of G. spinosum agar consisted of yield and viscosity of 25.50% and 26.87 cP, respectively. The viscosity of G. spinosum agar met the standard quality of agar set by FAO. The alpha glucosidase inhibitor test results of G. spinosum agar had a percent inhibition of 24.86% (500 ppm), 22.75% (450 ppm), 20.29% (400 ppm), 18.57% (300 ppm),
15.20% (200 ppm), 13.12% (150 ppm), 9.86% (100 ppm), acarbose 98.18% (10
ppm) respectively.
