ANALYSIS OF ORGANOPHOSPHATE PESTICIDE RESIDUE AND ANTIOXIDANTS IN SPINACH (Amaranthus sp) IN KARTAMA GARDEN SUB DISTRICT OF MARPOYAN DAMAI PEKANBARU Riski Novera Yenita (Supervised by Prof. Dr. Ir. H. Bintal Amin, MSc and Christine Jose, PhD) ABSTRACT Control of environmental pollution is one of the national food safety programs that must be implemented. Agricultural products are required to have a good standard of quality and safe for consumption. The agricultural product could endanger human health trought the results of pesticide residues. Spinach is vegetable that has natural antioxidant compounds and high foods fiber. Antioxidants can aid the body and repair demaged cells, and prevent various health problems. The purpose of this research was to determine levels of organophosphate pesticide residues and antioxidants in different varieties of spinach and the relationship between the levels of organophosphate pesticide residues with antioxidants in spinach. The results of this research found the difference between the level of organophosphate pesticide residues based on the color of spinach (p < 0.05), while there was no difference between the antioxidant levels of antioxidants on the color of spinach in the green and red spinach (p > 0.05). There was found the correlation between organophosphate pesticide residue levels and antioxidants in spinach (p < 0.05). Based on the results of 18 samples tested only 7 were below the limits of pesticide residues (< 0.1 mg/kg) and 9 samples exceeded the pesticide residue limits (> 0.1 mg/kg) according to decree of Minister of Health number 881/MENKES/SKB/VIII/1996 and Minister of Agriculture of RI number 711/Kpts/TP.270/8/96.
