Mangosteen fruit rind (Garcinia mangostana L.) contain phenolic compounds and tannins which have biological activity as antioxidants. The process of extraction of antioxidant compounds, phenolics and tannins from the rind of the mangosteen needs to be studied to improve the content of antioxidant compounds, phenolics and tannins in the extracts. Cellulase enzymes and ethanol used in the extraction process is expected to increase antioxidant activity, total phenolics and tannins extracted through transglycosylation reaction. Mangosteen rind was extracted with and without the enzyme cellulase T. asperellum LBKURCC1 in 0.05 M sodium acetate buffer pH 5.5 and 50% ethanol. Determination of antioxidant activity was analyzed by the of DPPH (2,2-diphenyl-1-picryl-hydrazyl) method, total phenolic content was analyzed using the Folin-Ciocalteau method and total content of tannins analyzed using Folin-Denis method.
