Diversifikasi Bakpao Konsentrat Protein Ikan Patin (Pangasius Hypopthalmus) Dengan Ekstrak Bunga Rosella (Hibicus Sabdariffa)
The aim of this research was to determine the organoleptic and proximate value of the diversification of catfish protein concentrate (Pangasius hypophthalmus) with rosella flower extract (Hibiscus sabdariffa) with different concentrations. The method used was experimental method, with Completely Randomized Design (CRD) consisting of 4 treatment levels A0 (without rosella flowers extract) A1 (10 ml of rosella flowers extract), A2 (20 ml rosella flowers extract) and A3 (30 ml of rosella flowers extract). The tested parameters were organoleptic (appearance, taste, odor and texture) and proximate analysis (moisture, protein and fat content). Based on the consumer acceptance on the diversification of bakpao catfish protein concentrate with different rosella extract that A2 treatment (20 ml of rosella extract) was the best treatment with characteristics: red color, the aroma was still typical of bakpao, solid and compact texture, and a distinctive taste of bakpao. Meanwhile the proximate anaylsis of A2 treatment for moisture, protein, and fat content was 31,61%, 7,70% and 6,26%, respectively.
