Pengaruh Penambahan Ekstrak Kulit Buah Naga Merah (Hylocereus Polyrhizus) Sebagai Pewarna Alami Terhadap Mutu Permen Jelly Rumput Laut Eucheuma Cottonii
This study aims to determine the addition of red dragon fruit skin extract (Hylocereus polyrhizus) best on making seaweed jelly candy Eucheuma cottonii as a natural colorant based on the organoleptic quality testing and chemical analysis. The experimental method was used experimentally, with different amount of extract of dragon fruit skin extract (Hylocereus polyrhizus) as natural dye.The experimental design used was Completely Randomized Design (CRD) one factor that is not using red dragon fruit skin extract (P1); Extract of red dragon fruit skin 20 ml (P2); Extract of red dragon fruit skin 40 ml (P3); Extract of red dragon fruit skin 60 ml (P4) with 3 replications. Based on the research known addition of red dragon fruit skin extract effect on color, texture, taste, flavor, moisture content, ash rate and sugar rate reduction of seaweed jelly candy.The best seaweed jelly candy is obtained on the addition of red dragon fruit skin extract 40 mlThe best seaweed jelly candy is obtained on the addition of red dragon fruit skin extract 40 ml with the value of organoleptic quality test of clear red color, chewy texture, sweet taste of jelly candy and flavor typical of jelly candy, has value of water rate obtained is 19,79%, value of ash rate of 2.98% and reduction of sugar rate 23,92%.
