Preferensi Konsumen Etnis Batak Terhadap Ikan Mas (Cyprinus Carpio) Di Kota Medan Provinsi Sumatera Utara
ABSTRACT
This study aims to determine the preferences of ethnic Batak consumers towards Carp
(Cyprinus carpio) in the Traditional Market in Medan. To determine consumer preferences for
goldfish that are influenced by customs and tastes of consumers. The method used is a survey
method by conducting research directly into the field, the sampling technique used is the
Binomunal approach which is carried out in proportion with the number of respondents obtained
as many as 68 consumers.
The results showed that the preference of the Batak ethnic consumers in this study chose
the physical condition of the fish that were still alive, the freshness of bright and clear fish eyes,
the freshness of fresh red fish gills, the elasticity of dense and chewy fish, the smell of fresh fish,
and the price of fish affordable and customary rules for consuming carp in the Batak ethnic
group, namely in the Toba Batak carp is a special food that must be in every tradition whereas in
Karo Batak the only carp as a substitute for their special food is terites because if the Karo
people are unable to buy bulls then the alternative Another thing that is consumed is goldfish, in
the Simalungun Batak tribe, goldfish must also be present, but must be accompanied by a bin
Ladok so that the event is going well and in Batak Mandailing Goldfish is also one of the
mandatory dishes in each of its customs. For this reason Carp is very important for the needs of
ethnic Bataks in Medan.
