Esterifikasi Asam Palmitat Dengan Gliserol Menggunakan Katalis Nades (Natural Deep Eutectic Solvents) Dari Betain Hidroklorida Dan Sorbitol
ABSTRACT
Mono and diglycerides (MDAG) are a group of synthetic emulsifiers usually used
for food emulsion. MDAG can be obtained by the esterification process of fatty
acids and glycerol with Deep Eutectic Solvents (DES) as a catalyst. DES is a
mixture of at least two components, there are Hydrogen Bond Acceptors (HBA) and
Hydrogen Bond Donors (HBD) which form eutectic phases with melting point is
lower than the constituent components. The objectives of this study are to determine
the physical and chemical properties of NADES (density, viscosity, pH, and FTIR),
determine the effect of reaction temperature and catalyst weight on the conversion
of the esterification process. NADES is formed by a mixture of betaine
hydrochloride and sorbitol at 80°C with a stirring speed of 200 rpm at a molar
ratio of HBA/HBD are 1:3. The esterification reaction of palmitic acid and glycerol
were taking place at a molar ratio of 1/6, the stirring speed was 400 rpm, the
temperature was 120, 150, and 180°C, and catalyst weight were 1, 3, and 5% based
on the palmitic acid weight. The composition of MDAG is determined by GC-MS.
The conversion reaction was increasing with increasing the temperature of the
esterification process and increasing the weight of NADES. in this condition,
MDAG was obtained with a composition of 78.54% (MG 19.01% and DG 59.53%)
in the emulsifier product. Also, this catalyst has good effectiveness for re-used as a
catalyst so it has an opportunity to be applied in industrial.
