Esterifikasi Asam Stearat Menggunakan Katalis Nades (Natural Deep Eutectic Solvents) Dari Betain Hidroklorida Dan Urea Food Grade
ABSTRACT
Monoglycerides are the fatty acid monoesters of glycerol. Monoglycerides are fats
consisting of free hydroxyl groups which are hydrophilic groups and fatty acid ester
groups which are lipophilic. MG and DG can be obtained from the triglyceride
glycerolysis process using enzymes or alkaline catalysts, selective hydrolysis, or fatty
acid esterification with glycerol. In this study MG and DG were synthesized by
esterification of stearic acid with glycerol using NADES (Natural Deep Eutectic
Solvent) as a catalyst. NADES is an environmentally friendly and non-toxic organic
solvent made from a eutectic mixture of HBA (Hydrogen Bond Acceptor) and HBD
(Hydrogen Bond Donor). The formation of NADES in this study used betaine
hydrochloride as HBA and food grade urea as HBD. This study aims to determine the
chemical properties of NADES (density, viscosity, pH and FTIR), to study the effect of
temperature and the amount of catalyst on the reaction conversion. The esterification
reaction was carried out for 3 hours, with a glycerol / stearic acid mole ratio of 1/6,
stirring speed 300 rpm, temperature variations (120 0C, 150 0C, and 180 0C), and
variations in the amount of catalyst (15, 3% and 5% by weight. ). The results of the
physical and chemical properties test showed that NADES had a density of 1.134 g /
ml, a viscosity of 8.81 cp and a pH of 2. The FTIR test results showed that there was
a hydrogen bonding interaction between HBA and HBD in NADES. The highest
conversion reaction was obtained at a temperature of 180 0C and the amount of
catalyst 5%, which was 90.81%. The results of GCMS analysis obtained a diglyceride
composition of 26.85% and a monoglyceride composition of 11.09%.
