Sifat Fisikokimia Gelatin Tulang Ikan Cunang (Congresox Talabon) Dengan Perendaman Asam Sitrat, Asetat, Dan Fosfat
Abstract
This study aimed to determine the physicochemical characteristics of yellow pike
conger (Congresox talabon) bone gelatin with immersion in weak acids (phosphate,
citrate, acetate) in the demineralization process of yellow pike conger bone. Analysis
of physical parameters included yield, viscosity, pH, and chemical parameters
included moisture content, ash content, protein content. This research method was an
experimental method using a non-factorial Completely Randomized Design (CRD)
with 3 treatments: G1 (immersed by phosphoric acid), G2 (immersed by citric acid),
G3 (immersed by acetic acid) and the data were analyzed using analysis of variance
(ANOVA). The results on the characteristics of yellow pike conger bone gelatin
obtained than G1 was the best treatment with a yield value of 8.89%. The results of
the analysis have been appropriated the standards including viscosity, pH, moisture
content, ash content, protein content, namely 4.00 cPs, 4.46, 6.39%, 11.76% and
54.74%.
