ABSTRACT
Quality of honey is a benchmark for the excellence of honey products in
meeting consumer needs. The parameters that can be used to determine quality of
honey can be viewed from the physical, chemical and sensory properties of honey.
This study aims to analyze response of the gas sensor to the aroma of sample and
relationship of gas sensor output voltage to sugar content and pH of honey. The
electronic nose system consists of 6 Mingan Qilail (MQ) gas sensors, namely MQ
2, MQ 3, MQ 4, MQ 5, MQ 6 and MQ 9. The samples studied were 2 forest
honey, 5 branded honey (BPOM, MUI and DINKES permit), and date palm
extract. Sugar content was measured manually with a Brix refractometer and
honey pH was measured with a digital pH meter. Python based program is used
for data processing with the numerical integration method of trapezoid rules. The
area of the trapezoid represents the voltage generated by the gas sensor. Three of
the six gas sensors used in this study have high sensitivity, namely MQ 3, MQ 4,
and MQ 6 Honey samples that meet SNI 2013 are A, C, D and E. Honey samples
that do not meet SNI 2013 are B, F, and G. The relationship between sensor
output voltage and honey sugar content is 51% and the relationship between
sensor output voltage and honey pH is 49%.
