Esterifikasi Asam Stearat Dengan Gliserol Menggunakan Katalis Nades (Natural Deep Eutectic Solvent)
ABSTRACT
Emulsifier is an oleochemical product that are needed as an emulsion stabilizer in
the food industry. The emulsifier most widely used is MDG (Mono-Diglyceride)
because it is GRAS (Generally Recognize As Safe). The process of making MDG
generally consist of three ways which is esterification of fatty acid with glycerol.
Therefore, in this study MDG was synthesized by esterification of stearic acid with
glycerol using NADES (Natural Deep Autectic Solvent) catalyst. NADES is solvent
made from an eutectic mixture between HBA (hydrogen bond acceptor) and HBD
(hydrogen bond donor) which is non-toxic. This study used two types of NADES
with the betain hydrochloride as HBA, glycerol and glucose as HBD (NADES 1 =
glycerol ; NADES 2 = glucose). This study aims to determine the physic-hemical of
NADES catalyst and the effect of temperature and the addition of the amount of
catalyst in the esterification of stearic acid with glycerol using NADES catalyst.
The esterification reaction as carried out with a mole ratio of glycerol/stearic acid
1/6 for 3 hours with a stirring speed of 300 rpm at temperature (120ºC, 150ºC,
180ºC) and catalyst weight (1, 3, 5%-wt). Based on the physic-chemical properties
test, the density, pH and viscosity of NADES 1 were 1.141 g/ml, 1.23 and 0.218 cP
and NADES 2 was 1.293 g/ml, 1.59 and 0.759 cP. FT-IR test result showed the
presence of hydrogen bonds in the two NADES catalysts. The highest conversion of
95.10% was obtained at a temperature of 180 ° C with the amount of NADES 2
catalyst 3%. GC-MS test results showed the amount of monoglycerides 32.48% and
23.51% diglycerides.
