Pengaruh Larutan Asam Cuka (Ch3cooh) Dengan Lama Waktu Perendaman Berbeda Terhadap Kandungan Logam Berat Merkuri (Hg) Dan Tembaga (Cu) Pada Lokan (Geloina Erosa)
ABSTRACT
Shellfish is one of the marine biota that is easily contaminated because of
its slow movement, making this biota vulnerable to the influence of polluted sea
water. One way to reduce the heavy metal content in shellfish is soaking using a
solution of acetic acid. This study aims to determine the soaking time with acetic
acid solution on the content of heavy metals Hg, and Cu in lokan meat (Geloina
erosa) by soaking method using acetic acid. The experimental research method
used a non-factorial completely randomized design with different immersion
times, namely 60, 90 and 120 minutes. Parameter analysis consisted of metal
content of Hg, Cu, and sensory analysis. The results showed that the immersion
time of 60, 90, and 120 minutes of lokan meat in acetic acid solution resulted in
Hg metal content of 0.031, 0.027, and 0.014 ppm, respectively. The content of Cu
metal in lokam meat was soaked in acetic acid solution with immersion time of
60, 90, and 120 minutes was 5.09, 4.67, and 4.45 ppm. The results of
organoleptic analysis of lokan meat was soaked in acetic acid showed appearance
of 7.27, odor of 5.49 and a texture value of 7.44. Soaking lokan meat in acetic
acid solution was most effective for 120 minutes to reduce Hg and Cu metal
levels.
