Potensi Kitosan Dari Cangkang Keong Mas (Pomacea Canaliculata) Sebagai Antioksidan
ABSTRACT
A waste of gold snail shell in Batusangkar is a type of fishery waste whose
processing hasn’t been maximized that still causes a lot of environmental issues. It
was a raw material for the production of chitosan antioxidant test. This study
aimed to determine the quality of chitosan from gold snail shells. This study aims
to determine the quality of chitosan from golden snail shells as an antioxidant.
The manufacture of chitosan carried out 3 processes of demineralization,
deproteination, and deacetylation. The deacetylation degree test was carried out
using the FTIR spectroscopy method. The test parameters observed were water
content, ash, protein, degree of deacetylation and antioxidant test. The results of
the research on chitosan obtained moisture content, ash content, degree of
deacetylation and antioxidants at a temperature concentration of 100˚C of 1.48%,
8.67%, 69.9%, and 1220.95 ppm at a temperature of 110˚C of 2, 06%, 8.51%, the
degree of deacetylation is 54.3%, the antioxidant is 1986.15 ppm and 90˚C is
1.37%, 8.79%, the degree of deacetylation is 50.7% and the antioxidant is 1049.26
ppm.
