Aktivitas Antibakteri Bakteriosin Yang Dihasilkan Bakteri Asam Laktat Asal Cincalok Terhadap Escherichia Coli Dan Staphylococcus Aureus
ABSTRACT
This research aimed to determine the type of lactic acid bacteria isolated from
cincalok and determine the potential of bacteriocin from lactid acid bacteria as an
antibacterial against Escherichia coli and Staphylococcus aureus. This research
consisted of several steps, namely the manufacture of cincalok, isolation of lactic
acid bacteria, isolation of bacteriocins and testing of anbacterial activity.
Parameters observed were total total lactic acid bacteria, identification of lactic
acid, and antibacterial activity of bacterocins. The results of the analysis of the
total lactic acid bacteria in cincalok fermented for 5 days is 3,1x105 cfu/g. The
results of identification of lactic acid bacteria showed that the bacteria isolated
from cincalok were Streptococcus sp. and Lactobacillus sp. Both bacteria are able
to produce bacteriocins which can inhibit the growth of Escherichia coli and
Staphylococcus aureus. The inhibitory power produced by Streptococcus sp. on
Escherichia coli is between 6-7 mm and against Staphylococcus aureus is 7 mm,
while the inhibition produced by Lactobacillus sp. on Escherichia coli is 8 mm
and against Staphylococcus aureus is 9 mm.
