Pembuatan Alat Pembakar Lemang Tipe Rotary Tertutup
ABSTRACT
Lemang is a traditional Indonesian food cooked by roasting glutinous rice in bamboo over an open fire. The manual roasting process requires a long duration and constant attention to ensure even cooking, often resulting in inefficiencies and uneven doneness. To address these issues, a closed-type rotary lemang roasting machine was designed and developed in this final project. The aim of this project is to improve the efficiency of the roasting process and produce lemang with more uniform doneness. The development process included literature review, design planning, material selection, fabrication of components such as the frame, roasting drum, lemang holders, and drum cover, followed by assembly and testing. The rotary system is powered by a 0.75 HP AC electric motor coupled with a 1:35 ratio gearbox, enabling automatic rotation of bamboo lemang inside the closed roasting chamber. Test results show that the machine is capable of roasting up to 10 bamboo sticks of lemang simultaneously in a shorter time compared to traditional methods. The closed system maintains a more stable roasting temperature, reduces scattered ash waste, and produces lemang with more consistent and even doneness. In conclusion, the closed-type rotary lemang roasting machine effectively improves roasting efficiency and product quality. This device has strong potential for application by small and medium enterprises (SMEs) involved in traditional culinary production.
