Karakteristik Fisikokimia Kombinasi Minyak Ikan Patin (Pangasius Hypophthalmus), Hati Ikan Hiu (Centrophorus Atromarginatus) Dan Sawit Merah (Elaeis Guineensis Jacq.)

Physical properties of crude catfish oil had a cloudy yellow color, a fishy
aroma typical of catfish and a semi-solid texture, after being purified it is bright
yellow in color, has a slightly fishy aroma and a semi-solid texture. The free fatty
acid (FFA) content of crude catfish oil is 2.45% to 1.33% after being purified,
meeting the IFOS quality standards of ≤1.5% and IFOMA of ≤7% with the crude
catfish acid number of 4.87 mg KOH/g being 2.63 mg KOH/g after purification.
The crude catfish peroxide value is 8.77 meq/kg to 4.39 meq/kg after purification,
according to IFOS of ≤1.5% and IFOMA of 3-20%. The crude catfish iodine
number is 87.65 g I2/100g to 83.94 g I2/100g after purification. The crude catfish
saponification rate is 172.21 mg KOH/g to 192.90 mg KOH/g after purification.
The process of refining catfish oil reduces the levels of free fatty acids, acid and
peroxide values and increases the saponification and iodine values.
The fatty acid composition of crude and pure catfish oil, shark liver oil
and red palm oil (RPO) were the highest saturated fatty acids (SFA) in RPO
(40.02%), followed by pure and crude catfish oil (32.71% and 30.11%) and shark
liver oil (17.84%). The highest PUFA content in shark liver oil (38.94%),
followed by pure and crude catfish oil (21.62% and 20.55%) and RPO (9.11%).
The highest omega-3 and omega-6 fatty acids were found in shark liver oil

(3.56% and 35.35%), followed by catfish oil (1.72 and 19.9%). Red palm oil does
not contain omega-3 and omega-6.
The combination of 3 types of oil (MP: MH: MSM) had an orange color.
The orange color on the MC3 is stronger because of the more RPO volume. The
FFA levels in MC1, MC2, MC3 and MC4 were 1.32%, 1.44%, 1.26% and 1.58%,
respectively, with an acid number of 2.61 mg KOH/g, 2.86 mg KOH /g, 2.50 mg
KOH/g and 3.15 mg KOH/g. The FFA levels in MC1, MC2 and MC3 was be
according to IFOS and IFOMA standards. The peroxide values MC1, MC2, MC3
and MC4 were 15.77 meq/kg, 17.36 meq/kg, 15.61 meq/kg and 17.79 meq/kg,
respectively. The peroxide value of the combined oil exceeds IFOS standards, but
complies with IFOMA standards. Iodine levels in MC1, MC2, MC3 and MC4 were
65.93 g I2/100g, 83.21 g I2/100g, 71.12 g I2/100g and 94.82 g I2/100g,
respectively. The saponification values of MC1, MC2, MC3 and MC4 were 157.20
mg KOH/g, 155.43 mg KOH/g, 148.03 mg KOH/g, and 174.44 mg KOH/g,
respectively. The thiobarbituric acid (TBA) values for MC1, MC2, MC3 and MC4
were 13.58 mg malonaldehyde/kg, 13.08 mg malonaldehyde/kg, 11.53 mg
malonaldehyde/kg and 12.04 mg malonaldehyde/kg, respectively. The carotenes
in MC1, MC2, MC3 and MC4 were 220.68 mg/kg, 180.33 mg/kg, 313.70 mg/kg
and 307.60 mg/kg, respectively. The total tocopherols in MC1, MC2, MC3 and
MC4 were 607.80 mg/kg, 486.47 mg/kg, 759.13 mg/kg and 726.47 mg/kg,
respectively. The density values for MC1, MC2, MC3 and MC4 were 0.682 g/ml,
0.685 g/ml, 0.686 g/ml and 0.681 g/ml, respectively. The viscosity values for MC1,
MC2, MC3 and MC4 were 25.58 cPs, 25.19 cPs, 26.01 cPs and 25.21 cPs
respectively.
Identification of compounds that make up the combination of MC1, MC2,
MC3 and MC4 oil was resulted in 5 dominant peaks in each oil sample. The
results of the identification of the compound components are estimated to contain
tetradecanoic acid, decanoic acid, 1,5-Cyclododecadiene, pentadecanoic acid
and octadecanoic acid.
The physicochemical characteristics of MC3 was the best treatment, which
had a stronger orange color than the other combinations with a slightly fishy
aroma, semi-solid texture, FFA content 1.26%, acid number 2.50 mg KOH/g,
peroxide number 15.61 meq/kg, iodine number 71.12 g I2/100g, saponification
number 148.03 mg KOH/g, TBA number 11.53 mg malonaldehyde/kg, carotene
313.70 mg/kg, total tocopherol 759.13 mg/kg, density 0.686 g/ml and viscosity
26.01 cPs.
