ABSTRACT
Probiotics are live microorganisms that can benefit the health of their host when consumed in sufficient quantities. The abilities of cell surface hydrophobicity, autoaggregation, and coaggregation are important properties for probiotics that indicated the ability of bacteria to adhere and multiply in the digestive tract. The study aimed to evaluate the properties of cell surface hydrophobicity, autoaggregation and coaggregation of Lactiplantibacillus plantarum strain HBUAS62562 ON005210 and Lavilactobacillus brevis strain OQ405851.1 M52 isolated from dadih microencapsulated with or without skim milk. This study was carried out experimentally using a complete randomised design (CRD) with four treatments of Lactiplantibacillus plantarum strain HBUAS62562 ON005210 and Lavilactobacillus brevis strain OQ405851.1 M52 isolated from dadih microencapsulated with or without skim milk, and each treatment was repeated four times, so that 16 experimental units were obtained. The parameters observed in this study were cell surface hydrophobicity, autoaggregation and coaggregation. The results showed that Lactiplantibacillus plantarum strain HBUAS62562 ON005210 and Lavilactobacillus brevis strain OQ405851.1 M52 isolated from dadih microencapsulated with skim milk significantly affected the values of hydrophobicity, autoaggregation, and coaggregation. Microencapsulation with skim milk caused the two bacteria to increase the surface cell hydrophobicity value by 5 ̶ 6% and autoaggregation ability by 6 ̶ 7%. In comparison to pathogenic bacteria, Lactiplantibacillus plantarum strain HBUAS62562 ON005210 and Lavilactobacillus brevis strain OQ405851.1 M52 exhibited a more excellent coaggregation value with other lactic acid bacteria.
