Aktivitas Antimikroba Bakteri Asam Laktat Yang Diisolasi Dari Limbah Pengolahan Susu Kedelai Terhadap Bakteri Patogen
The study was designed to evaluate the extent of the antimicrobial activity of lactic acid bacteria (LAB) isolated from okara of soymilk against pathogen bacteria Escherchia coli 0157 and Staphylococcus aureus ATCC-25329. The research was conducted experimentally by testing lactic acid bacteria isolated from okara and cell-free supernatant of isolates in a petri dish that already cantained microbial pathogens. Antimicrobial activity was tested using the agar well diffusion method. The data obtained were tabulated and analyzed descriptively. The results showed that LAB from okara of soymilk has the greater inhibition against Escherchia coli 0157 than against Staphylococcus aureus ATCC-25329. The average inhibition zone diameter of LAB isolates against Escherchia coli 0157 ranged from 8.566 to 9.106 mm and Staphylococcus aureus ATCC-25329 7.9 to 9.1 mm. The average value of inhibition zone diameter of the cell-free supernatant against Escherchia coli 0157 ranged from 7.673 to 7.740 mm and Staphylococcus aureus ATCC-25329 ranged from 5.746 to 6.073 mm.
