Optimasi Lama Pemanasan Pati Aren Dengan Modifikasi Heat Moisture Treatment

Native arenga starch has several disadvantages such as easy retrogradation and tends to be unstable to heat conditions. Heat Moisture Treatment modification was carried out on arenga starch to improve the physicochemical properties. Heat Moisture Treatment is a physical modification technique for starch by combining moisture and heat. This study aimed to optimize the heating time of modified arenga starch by Heat Moisture Treatment (HMT) and investigate the properties of modified arenga starch. This study was conducted experimentally using a completely randomized design (CRD) with 4 treatments and 4 replicates. The treatments in this study were HMT heating time, namely HMT1 (0 h), HMT2 (3 H), HMT3 (4 h), and HMT4 (5 h). The data obtained were statistically analyzed using Analysis of Variance (ANOVA) followed by Duncan's multiple range test (DMRT) at the 5% level. The best treatment in this study was the heating time of HMT for 5 hours (HMT4). Modification of arenga starch by HMT4 resulted moisture content 8.38%; amylose content 55.72%; amylopectin content 44.29%, water holding capacity 99.77%, oil holding capacity 163.75%, swelling power 8.48g/g, solubility 4.25%, pasting temperature 79.90%, peak viscosity 2582 cP, trough viscosity 1401 cP, breakdown viscosity 1181 cP, final viscosity 2548 cP, dan setback viscosity 1147 cP.
