Penurunan Kadar Air Pada Madu Lebah Sialang Dengan Adsorben Kapur Sirih
ABSTRACT
Honey not only contains sweeteners or food flavorings, but honey also contains very essential nutrients. Honey is produced by honey bees by utilizing plant flowers. In this study, the decrease in water content in honey used whiting as the adsorbent. This study aims to determine the ability of whiting as an adsorbent in reducing the water content of honey bee silang and determine the quality of color, taste and smell of honey after being adsorbed with whiting. The decrease in the water content of honey is done by mixing honey with variations of whiting as much as 5 grams, 10 grams and 15 grams takes 1 hour, 2 hours and 3 hours respectively, then the separation between honey and whiting is carried out by filtering, then carried out testing water content, specific gravity, pH and organoleptic in honey. The results showed that the best reduction in the water content of Sialang honey was in the variation of whiting as much as 15 g at 3 hours, namely water content of 6.68%, specific gravity of 1.4343 g/mL, pH 11.73. The results of the organoleptic test showed a slightly sweet taste, a slight honey smell and black color.
