Karakteristik Garam Fungsional Dari Rumput Laut Cokelat (Sargassum Aquifolium)
Abstract
Sargassum aquifolium is a brown seaweed that has potential as a raw material for functional salt. This study was aimed to determine the effect of different heating temperatures on the characteristics of functional salt of S. aquifolium. The method used was an experiment using a non-factorial completely randomized design (CRD). The treatments consisted of different heating temperatures of 25°C 30°C and 35°C with 3 repetitions. The analysis parameters consisted of yield, sodium and potassium content, NaCl, bioactive components and antioxidant activity. Heating with temperatures of 25°C, 30°C and 35°C on S. aquifolium salt obtained yield values of 3,73%; 5,93%; and 8,01%, respectively. Sodium mineral content obtained in S. aquifolium salt in heating with temperatures of 25°C, 30°C and 35°C were 1,92 mg/g, 2,29 mg/g and 2,55 mg/g, respectively. S. aquifolium salt has potassium mineral content with heating temperatures of 25°C, 30°C and 35°C were; 39,18 mg/g; 42,64 mg/g and 46,00 mg/g, respectively. NaCl in S. aquifolium salt with heating temperatures of 25°C, 30°C and 35°C were; 13,43%; 10,37% and 7,95%, respectively. Secondary metabolites obtained in S. aquifolium salt at heating temperatures of 25°C, 30°C and 35°C were phenolics, flavonoids, steroids and saponins. Antioxidant activity in S. aquifolium salt with heating temperatures of 25°C, 30°C and 35°C obtained antioxidant activity with IC50 values of: 139,10 ppm; 147,34 ppm and 194,40 ppm. The heating at temperature 25°C was the best treatment in the manufacture of S. aquifolium salt. The resulting S. aquifolium salt had a yield of 3,73%, mineral sodium 1,92 mg/g, potassium 39,18 mg/g, NaCl 13,43%. The bioactive compounds obtained consisted of phenolics, flavonoids, steroids and saponins. S. aquifolium salt had antioxidant activity with an IC50 value of 139,10 ppm.
