Status Mutu Mikrobiologis Dan Sensoris Ikan Peda Yang Dipasarkan Di Pasar Tradisional Pekanbaru
Mackerel peda from Selasa Panam Market, Pagi Arengka Market and Kodim Market are sold and marketed in the open, making it very possible for contamination to occur by pathogenic microbes which can endanger consumer health. This research aims to evaluate the microbiological and sensory quality status of mackerel mackerel fish marketed at the Pekanbaru Traditional Market. The method used in this research is a survey method and sampling using a purposive sampling method. A total of 30 mackerel fish consisting of different market origins and marketing ages (3 and 7 days) were sampled from three markets, namely Panam Tuesday Market, Arengka Morning Market and Pekanbaru Kodim Market. The results of the research show that peda fish products marketed at Panam Tuesday Market, Arengka Morning Market and Kodim Market respectively have a Total Plate Number of 4.2; 4.5; and 4.8 colonies/g, total halophilic 3.1; 3.4; and 3.9 colonies/g, total coliform 4.7; 4.7; and 6.2 APM/g and Stapylococcus aureus 4.6; 4.8; and 5.3 colonies/g and sensory values between 6.4 and 8.2. Based on research that has been carried out, the results show that mackerel fish differs according to market origin and marketing age and meets the standard limits set by SNI, except for total coliform which is more than 3 APM/g and the sensory quality of the product on the 7th day is below standard. SNI is a minimum of 7.
