Analisis Peningkatan Kualitas Produksi Untuk Mengurangi Tingkat Cacat Menggunakan Metode Statistical Processing Control (Spc) Dan Kaizen (Studi Kasus Pabrik Roti Deanova)
ABSTRACT
Deanova Bread Factory is an UMKM company engaged in food production. In the production process, there are several problems faced by Deanova Bread Factory, such as uneven bread cooking, bread that does not rise to pores. Deanova Bread Factory can produce approximately 15,000 pieces of bread per month, there is production that fails every month. In June, the number of defective products was 486 pieces of bread with a percentage of 3.37% and in July the number of defective products was 451 pieces of bread with a percentage of 2.98%. The purpose of this study was to determine the proposed improvements using the Statistical Processing Control (SPC) and Kaizen methods. The application of management methods such as Statistical Process Control (SPC) is a problem-solving technique used to monitor, control, analyze, manage, and improve products and processes. Kaizen can be defined as a system that makes continuous improvements in quality, technology, processes, corporate culture, productivity, safety, and leadership. The results of this research are suggestions for action on problems caused by several factors such as humans, materials, methods, machines. Proposed improvements were made by adding an automatic gas ignition panel box to the oven and designing standard operating procedures (SOP) for the bread baking process. The results of the implementation of the improvement plan resulted in a reduction in the percentage of defects in October by 0.93% and in November by 0.90%.
