Uji Fitokimia Pada Kecambah Dan Microgreens Lamtoro (Leucaena Leucocephala (Lam.) De Wit)
Mature seeds of lamtoro (Leucaena leucocephala (Lam.) de Wit) contain high levels of protein and carbohydrates, various secondary metabolites, and exhibit strong antioxidant activity. These seeds have the potential to be developed as functional foods in the form of sprouts and microgreens. The aim of this study was to assess the feasibility of lamtoro sprouts and microgreens as functional foods based on qualitative phytochemical tests conducted on both fresh and dried samples. The results showed that both fresh and dried lamtoro sprouts and microgreens are suitable to be developed as functional foods. Both forms contained alkaloids, flavonoids, tannins, steroids, and saponins. Lamtoro microgreens exhibited a more intense coloration than lamtoro sprouts for alkaloids, flavonoids, tannins, and steroids, and produced more foam in the saponin test. Dried samples showed more intense results than fresh samples in the tests for alkaloids, flavonoids, tannins, and steroids. The saponin test on fresh samples produced more foam compared to dried samples.
