Pengaruh Asam Yang Berbeda Terhadap Karakteristik Fisikokimia Gelatin Tulang Ikan Nila (Oreochromis Niloticus)
Gelatin is a heterogeneous mixture of polypeptides produced through the hydrolysis of collagen from animal connective tissue. Gelatin has many functions, including as a stabilizer, emulsifier, binding agent, thickening agent, and edible film. This research method employs an experimental approach by conducting direct experimentstodetermine the physicochemicalcharacteristicsof gelatin fromtilapia bones through immersion in acetic acid and sulfuric acid at a concentration of 4%. The treatments consist of two different acids: acetic acid immersion and sulfuric acid immersion. Gelatin extracted from tilapia bones using acetic acid as a solvent has the following characteristics: yield (3.24%), viscosity (3.90 cPs), pH (5.62), moisture content (3.56%), ash content (10.52%), and proteincontent (64.00%). The characteristicsof gelatin extracted using sulfuricacid asa solvent areyield (5.14%), viscosity (1.35 cPs), pH (4.53), moisture content (10.50%), ash content (16.51%), and protein content (26.14%). Based on the results of the parameters tested, it can be concluded that the acetic acid treatment is superior to the sulfuric acid treatment, in accordance with SNI and GMIA standards.
