Es Krim Berbasis Susu Kedelai Dengan Penggunaan Ekstrak Daun Pandan Wangi Pada Konsentrasi Yang Berbeda
ABSTRACT
Ice cream is a dairy product that is loved by all ages. It is usually made
using cow's milk fat, which can be replaced with plant based milk, namely soy
milk, which has the same protein content cow's milk. Ice cream made from
mixture of soy milk has less appealing color, so it requires the addition of natural
coloring. One of these pandan.This study aims to determine the best concentration
of pandan and get the selected treatment. The treatments in this study were SP1
without pandan (control), SP2 (5% pandan), SP3 (10% pandan), and SP4 (20%
pandan). The data obtained from the observations were then statistically analyzed
using analyzed of variance (ANOVA) and continued with Duncan's multiple
range test (DMRT) at the 5% level. The results of the variance analysis of the
