Pengaruh Substitusi Tepung Ikan Dengan Tepung Jeroan Ikan Patin (Pangasianodon Hypophthalmus) Yang Difermentasi Menggunakan Em-4 Terhadap Aktivitas Enzim Dan Histologi Usus Ikan Baung (Hemibagrus Nemurus)
This studywas conductedfrom November2024 to March 2025in theFish Nutrition Laboratory, Faculty of Fisheries and Marine Sciences, Universitas Riau. The objective of this research was to describe changes in digestive enzyme activity (protease, amylase, and lipase) and intestinal histology of Asian Redtail Catfish (Hemibagrus nemurus) fed diets containing fermented catfish offal flour using EM-4. The experiment employed a Completely Randomized Design (CRD) with one factor consisting of five treatment levels and three replications. The treatments were: control diet without fermented catfish offal flour (P0), and diets containing 20%, 30%, 40%, and 50% fermented catfish offal flour (P1, P2, P3, and P4 respectively). Seedlings of Asian Redtail Catfish weighing 5.20 ± 0.21 g were stocked in 15 net cages measuring 1 x 1 x 1 m at a stocking density of 30 fish per cage. The experimental diets were administered at 10% body weight, three times daily at 07:00, 12:00, and 17:00 WIB, for 60 days. Feed digestibility measurement was performed in aquariums sized 60 x 40 x 40 cm with a stocking density of 20 fish. The test diets were supplemented with 0.5% Cr2O3 as an inert marker. Fish feces were collected for Cr2O3 and protein analysis. The results showed that substituting commercial fish meal with fermented catfish offal flour affected digestive enzyme activities and intestinal histology of Asian Redtail Catfish. The diet containing 50% fermented catfish offal flour produced the best enzyme activity results: protease activity of 0.038 IU/mL, lipase 0.043 IU/mL, and amylase 0.615 IU/mL. Additionally, this treatment yielded a feed digestibility of 57.26%, promoted villus elongation in the intestinal tissue, and induced the presence of goblet cells.
