ABSTRACT
Probiotics are live microorganisms that provide health benefits when
consumed in sufficient amounts. Probiotics help maintain gut health by producing
metabolites, such as short-chain fatty acids (SCFAs), through the fermentation of
undigested carbohydrates. One microorganism commonly used as a probiotic is
Limosilactobacillus fermentum InaCC B1295. Limosilactobacillus fermentum
InaCC B1295 is encapsulated with microfiber cellulose from palm tree trunks,
which aims to protect probiotic cells from extreme conditions. This study aimed to
evaluate the effect of commercial ultra-high-temperature (UHT) milk with or
without encapsulated probiotics in cellulose microfiber hydrogel from palm trunks
on ALRP in adult males. The study was conducted by testing the effect of probiotic
intervention on male subjects using a non-factorial completely randomized design
(CRD) with two treatments, each consisting of 15 subjects. The study was
conducted for 60 days where group I subjects consumed UHT milk without
probiotics (P1) and group II subjects consumed UHT milk containing 109 CFU/mL
encapsulated L. fermentum InaCC B1295 (P2). The observed parameters included
acetic acid levels, propionic acid levels, butyric acid levels, and total short-chain
fatty acid levels. The results showed that consuming L. fermentum InaCC B1295
encapsulated in palm trunk HCMF for 60 days significantly affected on acetic acid
and total short-chain fatty acid levels, but did not significantly effected propionic
acid and butyric acid levels. Probiotics can alter the composition of gut microbiota,
contributing to an increase in ALRP, which plays an important role in gut health.
