ABSTRACT
Cassava (Manihot esculenta) is an agricultural commodity that requires a drying process to reduce its moisture content and maintain product quality. Conventional drying methods still have limitations due to their dependence on weather conditions and fluctuations in solar radiation intensity. This study aims to analyze the performance of a cabinet-type solar dryer using stones and without stones as thermal energy storage media.The research was conducted experimentally by comparing temperature distribution, heat storage capability, drying efficiency, and cassava mass reduction in both drying systems. The results indicate that the use of stones as a thermal energy storage medium improves the stability of the drying chamber temperature, optimizes the utilization of solar energy, and enhances the effectiveness of the drying process compared to the system without stones.Based on the findings, the use of stones as a thermal energy storage medium has a positive effect on the performance of a cabinet-type solar dryer in the cassava drying process and has the potential to serve as an efficient, economical, and environmentally friendly drying technology for agricultural products.
