Pemanfaatan Lilin Lebah Sebagai Pelapis Buah Belimbing Manis (Averrhoa Carambola L.)
The purpose of this study was to get the best concentration of beeswax in sweet star fruit coating. This study used a Completely Randomized Design, which consists of six treatments and three replications in order to obtain eighteen experimental units. The treatment in this study were L0 ( without addition beeswax emulsions), L1(addition beeswax emulsion 2%), L2 (addition beeswax emulsion 4%), L3 (addition beeswax emulsion 6%), L4 (addition beeswax emulsion 8%), and L5 (addition beeswax emulsion 10%). Data were analyzed using the analysis of variance followed by Duncan’s New Multiple Range Test at 5% level. The results of variance showed that the emulsion coating of wax on the sweet star fruit significantly effect on weight loss, texture measurements,and water content, but did not significantly affect total dissolved solids, and sensory testing. The best treatment was L3 (addition bee wax emulsion concentration 6%) with a weight loss of 15.71%, the texture of 5.17 kg/cm2, the total dissolved solids of 1.350 brix, water content 88.53%, sensory test for colour 4.43 (yellow), aroma 4.47 (sweet star fruit), flavor 4.40 (sweet) and texture 4.47 (rather soft).
