Nades (Natural Deep Eutectic Solvents) Sebagai Katalis Pada Esterifikasi Asam Stearat Dengan Gliserol
ABSTRACT
MDG emulsifiers (mono and diglycerides) are additives that are highly needed in the food industry. However, the process of making MDGs generally uses catalysts that are toxic and not safe for food. Therefore, in this study NADES (Natural Deep Eutectic Solvent) is used as a catalyst in the esterification of stearic acid with glycerol in the manufacture of MDG. NADES is an environmentally friendly and non-toxic organic solvent made from an eutectic mixture between HBA (hydrogen bond acceptor) and HBD (hydrogen bond donor). The formation of NADES in this study used betaine hydrochloride as HBA and two types of HBD (NADES citric acid) and (NADES propionic acid). This study aims to determine the physical and chemical properties of NADES (density, viscosity, pH and FT-IR), study the effect of temperature, amount of catalyst and acid type on NADES on reaction conversion and determine the effectiveness of re-used NADES. The esterification reaction was carried out for 3 hours, mol ratio of glycerol / stearic acid 1/6, stirring speed 300 rpm, temperature variation (120oC-180oC) and the amount of catalyst NADES (1-5% by weight). Tests of physical and chemical properties show that NADES citric acid has a density of 1,340 g / mol, a viscosity of 185 cP and a pH of 2.12 while NADES propionic acid has a density of 1.096 g/ mol, a viscosity of 71.8 cP and a pH of 1.09. FT-IR test results show the existence of hydrogen bond interactions in each NADES. The highest reaction conversion was obtained at 180oC and 5% by weight catalyst. In the use of NADES citric acid the reaction conversion was obtained by 82% while in the use of NADES propionic acid it was 84%. Based on FT-IR test the product of esterification results from both NADES with the addition of 5% catalyst at a temperature of 150oC and 180oC containing hydroxyl groups, esters and carboxylic acids. GC-MS results showed the presence of MG compounds by 79%. NADES can also be re-used so that it has the opportunity to be applied in industry.
