Pengaruh Konsentrasi Hcl Berbeda Terhadap Karakteristik Mutu Kolagen Dari Daging Teripang Pasir (Holothuria Scabra)
This study was aimed to determine the effect of using different HCl on the quality characteristics of collagen from sand sea cucumber (Holothuria scabra) and obtain the best HCl concentration on the quality of collagen from sand sea cucumber meat. The method used in this research was the experimental method. The experimental design used for collagen extraction was a Completely Randomized Design (CRD) and varying concentrations of HCl (4N, 5N, and 6N) as treatments during the collagen extraction process. Parameters measured in this study were water, ash, protein, yield test, pH, and FTIR test. The results showed that there was an effect of the use of different HCl concentrations on the quality of collagen in sand sea cucumber meat. The best HCl concentration was found in HCl 6N treatment with protein content reaching 97.19% (% DW) and yield of 19.35%, while the highest water content was found in the treatment of 4N HCl concentration of 67.37%. Different HCl concentrations did not affect the ash content and collagen pH of sand sea cucumber meat with the highest ash content in the 4N HCl concentration reached 0.87 and the highest pH in the 5N HCl concentration treatment was 3.9. The results of an analysis of functional groups of sea cucumber collagen using FTIR produced absorption peaks which included amide A, amide B, amide I, amide II, and amide III.
